Mandarin Chicken

*½ c. flour
*¼ c. corn starch
*1 tsp baking powder
*½ tsp baking soda
* 2/3 c. cold water
*lots of salt and pepper

*¾ c. water
*2 tbsp vinegar
*3 tbsp ketchup
*2/3 c. white sugar
*2 tbsp corn starch
*pineapple juice, to taste
*½ bell pepper, chopped to bite size
*1 can of mandarin oranges

Add to small pan all the sauce ingredients. Bring to boil, then turn down to a simmer, stirring occasionally, until ready to serve.

Cut 1 package of chicken tenderloins into bite size pieces.
Add oil to the bottom of a large, hot skillet, turn to high until oil is hot. (enough to cover chicken.
Mix the batter ingredients together in a small bowl. In another small bowl, beat 1 egg and a splash of milk.
Dip chicken into the milk, then batter, then place in hot oil. Let fry in oil until golden brown all around.

Serve chicken over rice and spoon sauce mixture over it.
