Balsamic Chicken (Fast!)

1 tsp. olive oil (I use about 2 and a blob of butter)
3/4 c. coarsely chopped onion
4 garlic cloves, sliced
2 (4 oz) chicken breasts halved (I use 4-6)
1 c. sliced green bellpepper
1/2 c. balsamic vinegar (I like to do 1/4 balsamic vinegar & 1/4 balsamic vinegairette)
1/4 c. mushrooms (or spinach, zucchini, eggplant, etc)
1 tsp. Italian seasoning
1 (14 oz) can petite diced tomato, UNdrained
1 c. hot cooked rice (I just prepare a batch of rice according to our fam’s size)

Heat the oil (and butter) in a large skillet over medium-high heat. Add and saute’ the onion and garlic for about 3 minutes. Add chicken and cook 4 minutes on each side or until browned. Next add the bellpepper, balsamic, tomatoes, and extra veggie. Reduce heat to medium-low and cook 20 minutes longer or until chicken is cooked. Serve over rice. (it really helps if you add the veggies and balsamic in a bowl, mix together, then pour over chicken..I also spice it with some onion powder, garlic, oregano, and a bit of thyme while stirring).
