The original recipe first:
3 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
2 cups sugar
2 cups pumpkin (cooked or canned)
1 & 1/4 cup veggie oil
1 & 1/2 cups chocolate chips
Preheat oven to 350. Combine first 4 ingredients. In a separate bowl beat together eggs, sugar, pumpkin and oil, until well mixed. Stir in dry ingredients, until just moistened. Add in chocolate chips. Pour into two greased loaf pans and bake 60-70 minutes.
**And to make it a bit healthier I made a few changes and I don’t think it alters the taste and the kids still devour it. It does make the bread a little denser though.
Changed the flour to 1 & 1/2 cups white flour and 1 & 1/2 cups wheat flour
Changed the oil to the same amount of applesauce** ❤ Amy Osterhout
