Fiesta Casserole

1 lb hamburger
Tortilla Chips (Kirkland brand is best)
Salsa (or enchilada sauce)
1 can diced green chiles
Cheese (I always use Fiesta Blend)
Lime juice
Garlic Salt and Taco Seasoning

Garnish: chopped tomato, diced green onion, black olives, shredded lettuce, sour cream, guacamole

Brown hamburger with lots of taco seasoning and garlic salt. Drain fat. Add lime juice, 3/4 cup Salsa (or 3/4+ of enchilada sauce), green chiles, and a large handful of shredded cheese. Stir together until cheese melts.

Add tortilla chips to a 9×13 glass baking dish almost all the way to the top. Spoon out the meat mixture over the chips and top with a layer of cheese (as much as you like ;). On top of that add tomatoes, olives, and green onion. Pop in a 350 oven for 15-20 minutes, or until the cheese has melted completely. Cut into it like you would a lasagna, top with any more garnishes, and eat with your fingers or with a fork. 🙂
