Garlic Aioli

(or just “Aioli” I guess, since I think aioli means garlicky mayo sauce?)

-1/2 cup mayonnaise
-1 teaspoon finely chopped garlic (I usually roast the garlic for a few minutes in the toaster oven — just a couple cloves, at 400 for about 5 minutes — to take the edge off, but I also sometimes used garlic powder instead — maybe a half tsp?)
-1 tablespoon lemon juice
-1/2 teaspoon hot sauce (optional — I don’t use it)
-2 tablespoons fresh, chopped coriander (I use ground coriander, about half as much)
-salt, to taste
-fresh ground pepper, to taste

Whisk all ingredients in a bowl. Refrigerate for at least an hour.
