Chicken Taco Soup


  • 3 chicken breasts
  • 1 small onion, chopped
  • 16 oz can of chili beans
  • 15 oz can of black beans
  • 15 oz can of whole kernel corn, drained
  • 8 oz can of tomato sauce
  • 2 cans rotel
  • 12 oz beer (optional)
  • 1 package taco seasoning

Add all ingredients except chicken to the crock pot and stir.  Lay uncooked chicken on top and lightly press until covered with liquid.  Cover and cook 5 hours on LOW heat.  Remove chicken and shred.  Add chicken back to the soup and cook 2 more hours.
