2 tbsp Olive oil
1 cup chopped onion
1/2 cup chopped green pepper (I sometimes use red pepper in place or with gr pepper)
1 tbsp chili powder
2 cloves of minced garlic
1/2 tsp cumin
1/2 tsp oregano
1/4 tsp salt
1 lb. ground turkey
1 can of diced tomatoes with green chiles (15oz)
I small can of tomato paste
I use can of black beans (optional: add other bean-small white beans, cannelini, etc or even use in place of)
*I add water, chicken broth or tomato sauce to ‘juice it up’ just by eyeing it up.
1. Place olive oil with onions, gr. pepper, chili powder, garlice, cumin, oregano and salt in pan. Cook until tender about 4 minutes.
2. Add turkey and brown (or ‘white’, depending on the grade of your turkey)
3. Place the mixture in your crockpot and add the black beans, tomatoes, paste and the ‘juice’ (see above *). I let it cook for about 4-5 hours on low and you will know when its done by the smell!
4. Serve with cornbread, taco chips (my fav), sour cream and shredded cheddar.
