Chicken Tortilla Soup

Ingredients:
1 can of Corn (strained to remove juice)
1 can of Black Beans (strained to remove juice)
1 Med Sized Pre-cooked Rotisserie Chicken **or use left over chicken or cooked shredded chicken**
1 box of Chicken Broth
1 jar of Roasted Garlic Salsa (Sprouts has a really good one, so does Trader Joe’s)

 Toppings:
1 Avocado
Shredded Cheddar Cheese
Tortilla Chips

 Instructions:
Remove chicken from the bone and place in a pot, add all other ingredients and heat for roughly 15 minutes (until hot). Then add toppings of sliced or cubed avocado, crumbled tortilla chips or strips and shredded cheese… Enjoy!!

 P.s. I have a friend who likes to use Frito-lay’s Fritos instead of tortilla chips and that tastes really good too! Also, some people like to add a dollop of sour cream as a topping 🙂
