Cheesy Saute’ed Salsa Chicken

3 large chicken breasts cut into one inch wide strips
3/4c any flavor shredded cheese
1/2c diced celery
1/2 diced green bell pepper
1/2 onion diced
1T minced garlic
1C and brand salsa. (I use mild Pace Picante)

In butter slow saute onions, celery,pepper and garlic. Season with salt and Oregano. Sprinkle the chicken with EVOO and season with season salt. When sauted vegetables are soft add all the chicken and mix together. Turn heat on low and cover. Let simmer, stirring occasionally, until chicken is cooked through. When chicken is fully cooked add salsa and thoroughly coat and mix chicken misture in it. Cover and bring back to a slow boil. Add cheese, and stir until melted. Ready to eat!
